200 grams Biscoff cookies, crushed into fine crumbs
50 grams unsalted butter, melted
400 grams full-fat cream cheese, softened at room temperature
200 grams Biscoff spread, plus extra for drizzling
60 grams powdered sugar, sifted
1 teaspoon alcohol-free vanilla extract
200 milliliters heavy whipping cream, chilled
Extra Biscoff cookies for garnish
Instructions
Step 1: Prepare the Cookie Base. Place the cookies in a food processor and pulse until they become fine crumbs. Mix the crumbs with the melted butter in a medium bowl until the mixture looks like wet sand. Line a standard muffin tin with paper liners and press about one large tablespoon of the mixture into the bottom of each cup, using the back of a spoon to pack it down firmly.
Step 2: Cream the Filling Base. In a large mixing bowl, beat the softened cream cheese, Biscoff spread, and powdered sugar together until the mixture is completely smooth and no lumps remain. Stir in the alcohol-free vanilla extract until well combined. It is important that the cream cheese is at room temperature to ensure a silky texture.
Step 3: Whip the Cream. In a separate chilled bowl, whip the heavy whipping cream until stiff peaks form. Be careful not to overbeat it, as you want it to remain light and airy. Gently fold the whipped cream into the cream cheese mixture using a spatula, being careful not to deflate the air you just whipped in.
Step 4: Assemble and Chill. Spoon the cheesecake filling over the prepared cookie bases in the muffin tin, filling them almost to the top. Smooth the tops with a small offset spatula or the back of a spoon. Place the tin in the refrigerator and allow the cheesecakes to set for at least 4 to 6 hours, though overnight is best for the flavors to meld.
Step 5: Decorate and Serve. Once the cheesecakes are firm, gently remove them from the muffin tin and peel away the paper liners. Gently heat a small amount of Biscoff spread in the microwave for 10 seconds until it is pourable, then drizzle it over each mini cheesecake. Top with a small piece of cookie or extra cookie crumbs before serving to your guests.
