Festive Deviled Eggs

Festive Deviled Eggs

  • Total Time: 25 minutes

Ingredients

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika for dusting
  • 1 tablespoon fresh chives, finely chopped
  • 2 slices cooked turkey bacon, crumbled
  • Pomegranate seeds for a festive garnish

Instructions

  1. Place your eggs in a single layer in a medium saucepan and cover them with at least an inch of cold water. Bring the water to a full boil over medium high heat, then immediately remove the pan from the heat and cover it with a lid. Let the eggs sit in the hot water for exactly 10 to 12 minutes to ensure the yolks are fully set but still creamy.
  2. While the eggs are sitting, prepare a bowl filled with ice and cold water. Once the timer goes off, carefully transfer the eggs to the ice bath using a slotted spoon. This stops the cooking process and prevents that unsightly green ring from forming around the yolk, while also making the eggs much easier to peel later.
  3. Once the eggs are completely cool, gently crack the shells and peel them under cool running water. Pat them dry with a paper towel. Use a sharp knife to slice each egg in half lengthwise, then gently remove the yolks and place them into a small mixing bowl, setting the whites aside on a serving platter.
  4. Mash the egg yolks with a fork until they are fine and crumbly. Add the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper to the bowl. Stir everything together vigorously until the mixture is completely smooth and creamy. You can also use a hand mixer if you want a particularly velvety texture.
  5. Spoon the yolk mixture back into the centers of the egg whites, or for a more professional look, use a piping bag with a star tip. Dust the tops lightly with smoked paprika. Finally, top each egg with a sprinkle of chopped chives, crumbled turkey bacon, and a few pomegranate seeds to give them that iconic Christmas appearance.
